Wine Background

Our goal in blending two noble wine grapes together is to acquire the best attributes of each varietal and marry them in a complimentary and seamless way. Cabernet Sauvignon is the foundation of this wine, adding power, structure, richness, grip, and complexity. Syrah brings generous, juicy, ripe flavors and a spicy nature that blends beautifully with the Cabernet. We have added a touch of Mouvedre this year to add a little spice to this dynamic blend. Our minimalist approach to producing "Final-Final," using indigenous yeast during fermentation and not filtering or fining, adds to the "purity of fruit" that is the hallmark of Washington State grapes - you receive a wine that is both delicious and very complex.

Notes

Final-Final is the last wine we blend, hence the name. Aromas scream out of the glass; black plumb, cherries, and a wonderful touch of wet soil. Spice aromas of clove and possibly star anise make the wine easily approachable. The wine is smooth but the acid is extraordinary and focused.
