Raise a Glass to Paulie GSM

EFESTĒ’s homage to the GSM is our Paulie, which is named for Paul Taylor, grandson to Helen and Daniel Ferrelli, and son of Angela and Kevin Taylor. Comprised of a blend of Grenache, Syrah, and Mourvèdre, GSM wines are known for their complex and rich flavors, owing to the three grape varieties that come together to create a beautifully balanced wine.

The Three Varietals

Paulie GSM is crafted from a blend of 42% Grenache, 37% Mourvèdre, and 21% Syrah. Typically, Grenache serves as the primary component in a GSM, delivering bright red fruit flavors and a refreshing quality essential to the wine’s balance. Its versatility makes it an excellent base for various blends. Mourvèdre, known for its higher tannin content, enhances the wine’s mouthfeel and complexity, often introducing subtle notes of earthiness or spice. Syrah contributes depth, structure, and minerality, culminating in a wine that appeals to a wide range of palates—from seasoned connoisseurs to those just beginning their wine journey.

The Winemaking Process

Paulie GSM grapes hail from Block One in the Stonetree Vineyard. Grown, harvested, pressed, and fermented as a single blend, this co-fermentation approach allows the individual characteristics of each grape to meld seamlessly, and highlights the terroir that shines through in each glass. The wine undergoes aging in around 30% new French oak for 20 months.

The Vineyard

Located in south-central Washington within the Columbia Valley, the Wahluke Slope AVA boasts an 81,000-acre region surrounded by the Columbia River. Characterized by a warm, dry climate and wind-blown sand soils, it excels in producing renowned red grape varieties such as Cabernet Sauvignon, Merlot, and Syrah. The name “Wahluke” stems from a Native American term meaning ‘watering place.’ This official Washington State appellation contributes to about 20% of the state’s annual grape harvest.

Tasting Notes

Paulie GSM has a lively, bright character with flavors of cranberry, raspberry, and a hint of iron. The Mourvèdre adds a nice kick of spice, which complements the vivid fruit flavors courtesy of the Grenache. A hint of new oak influence adds a layer of complexity and supports a long, smooth finish.

Food Pairings

GSM blends are incredibly versatile and food-friendly, and our Paulie GSM is no exception. Grilled or barbequed meats such as lamb, pork, and beef, complement the wine with their hearty flavors. Some recommendations for Paulie GSM include:

  • Grilled Pork and Roasted Vegetables: this is a classic pairing for a GSM.
  • Moussaka: A traditional Greek dish with layers of roasted eggplant and a beef or lamb-heavy meat sauce topped with bechamel.
  • Cheeses: Aged cheddar, smoked gouda, or Manchego are all excellent cheese pairings for a GSM.
