Ingredients:

  • 5 lbs of 2” chunky meat short ribs
  • Olive oil
  • Salt and pepper
  • 3 cups chopped leeks
  • 3 cups chopped celery
  • 2 cups chopped onions
  • 2 cups chopped carrots
  • 1 1/2 tbsp minced garlic
  • 1 bottle EFESTĒ Red Wine (recommended: Final-Final)
  • 1 quart beef broth
  • 1 can crushed tomatoes
  • 1 bottle stout beer
  • 6 sprigs of thyme (tied)

Instructions:

Step 1: Preheat and Roast

  1. Preheat your oven to 425°F (220°C).
  2. On a cookie sheet, place 5 lbs of 2” chunky meat short ribs. Drizzle with olive oil and season with salt and pepper.
  3. Roast in the preheated oven for 20 minutes. Remove from the oven and set aside.

Step 2: Sauté the Vegetables

  1. Heat 1/2 cup of olive oil in a Dutch oven over medium heat on the stove.
  2. Add 3 cups of chopped leeks, 3 cups of chopped celery, 2 cups of chopped onions, and 2 cups of chopped carrots.
  3. Cook for 20 minutes, stirring occasionally, until the vegetables are softened and starting to caramelize.

Step 3: Build the Braising Liquid

  1. Add 1 1/2 tablespoons of minced garlic to the Dutch oven and cook for another minute until fragrant.
  2. Pour in 1 bottle of EFESTĒ Red Wine (recommended: Final-Final). Reduce the heat to a simmer and let it cook for 15 minutes, allowing the wine to reduce slightly.
  3. Add 1 quart of beef broth, 1 can of crushed tomatoes, and 1 bottle of stout beer.
  4. Tie 6 sprigs of thyme together and add them to the pot.
  5. Return the roasted short ribs to the Dutch oven, making sure they are submerged in the liquid.
  6. Bring the mixture to a boil.

Step 4: Braise to Perfection

  1. Cover the Dutch oven and place it in the preheated oven.
  2. Cook covered for 1 hour.
  3. After 1 hour, remove the lid and continue to cook for another hour, uncovered, until the meat is tender and falling off the bone.
